nesting

Lists, mop, freezer, organize, declutter, scrub, dust, sweep...these are just some of the words that have been on my mind recently as I get ready for this baby. I become a cleaning frenzy and do the most organizing that I have ever done in my life when I'm ready for a baby to come. Even Troy was getting a little worried when I was refolding sheets in the linen closet to stack them neater. I borrowed a steam cleaner vacuum from a friend awhile ago and am planning on returning it as soon as I clean the high traffic areas one more time. :) Some of the craziness actually has to do with the baby coming, like washing tiny clothes, buying the car seat, tightening the screws on the bassinet and washing the sheets to place on it. I also have a small pile of things ready for the hospital bag. Here's a small list of the insane things that I have been doing lately...
Swept porch/cleaned out storage closet, washed ficus tree, cleaned windows, vacuumed door jams, cleaned girls clothes and closet out, scrubbed counters, cupboards and oven, made freezer meals, washed and vacuumed the van, bought most Christmas presents, created emergency phone number lists and schedules for the girls, and organized the pantry, refrigerator, and linen closet. The funny thing is I'll probably do some of these things again or at least have the thought to maybe clean the fridge one more time. It's crazy, I tell you!!

And for those who are wanting to know, here's a list of the freezer meals, with a recipe included for the really easy, fun ones. Posted especially for Catie, Erin S. and Kristi... :)

  • Country Chicken Pot Pie
  • Asparagus-Pesto Lasagna
  • Spinach Balls
  • French Toast Sticks (from an online friend)
6 large eggs
3/4 cup milk
2 TB pure maple syrup
1 tsp. cinnamon
1 loaf homemade whole-wheat bread, cut into slices

Combine first 4 ingredients. Blending well with a fork or mixing briefly in a blender. Cut each or your bread slices into 4 strips. Dip strips into mixture making sure you coat them completely with egg mixture. And then put them on a cookie sheet that has been heavily sprayed with a cooking spray like Pam.

Preheat your oven to 400 degrees and bake bread for 7 to 8 minutes. Turn bread over and continue baking about 3-5 minutes longer.. you want them to be just nicely golden brown.

You can eat them warm off the grill with butter and maple syrup or flash freeze them and store in a Ziploc bag. They can be reheated for a very quick breakfast.
  • Olive Garden Alfredo Fettucine (from an online friend)
8 ounces Cream cheese -- cut in bits
3/4 cup Parmesan cheese -- grated
1/2 cup Butter or margarine
1/2 cup Milk

8 ounces Fettuccine; cook -- drain In large saucepan combine cream cheese, Parmesan,
butter and milk, stirring constantly until smooth. Toss pasta lightly with sauce, coating
well. Leftovers freeze well. (I just make batches and they go straight to freezer...one of my Favorite comfort foods)
